  • 1½ teaspoons baking soda
  • Pinch salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 4 medium ripe bananas (mashed (about 1⅓ cups or 303 grams))
  • 1 cup coarsely chopped walnuts

Stepssimplified

  1. 1Preheat oven to 350°F. Grease two 8x4-inch loaf pans.
  2. 2In a medium bowl, whisk together 2 cups flour, 1½ teaspoons baking soda, and a pinch of salt.
  3. 3In a large bowl, whisk together 1 cup sugar, ½ cup oil, 2 eggs, and 1 teaspoon vanilla. Add 1⅓ cups mashed bananas (about 4 medium) and stir gently.
  4. 4Add the flour mixture to the banana mixture and stir until completely blended. Fold in 1 cup coarsely chopped walnuts.
  5. 5Divide the batter evenly between the two loaf pans. Bake for 35 to 45 minutes, until a thin knife inserted in the center comes out clean. If the loaves brown too quickly, cover with foil.
