- 1 cup coarsely chopped walnuts

- 2In a medium bowl, whisk together 2 cups flour, 1½ teaspoons baking soda, and a pinch of salt.
- 3In a large bowl, whisk together 1 cup sugar, ½ cup oil, 2 eggs, and 1 teaspoon vanilla. Add 1⅓ cups mashed bananas (about 4 medium) and stir gently.
- 4Add the flour mixture to the banana mixture and stir until completely blended. Fold in 1 cup coarsely chopped walnuts.
- 5Divide the batter evenly between the two loaf pans. Bake for 35 to 45 minutes, until a thin knife inserted in the center comes out clean. If the loaves brown too quickly, cover with foil.
