Fluffy American Pancakes

- 1Combine 150g self-raising flour, 1 tsp baking powder, 1/2 tsp salt, and 3 tbsp sugar in a bowl.
- 2Create a center depression, pour in 1 beaten egg and half of the 150ml milk, then whisk outward to prevent clumping.
- 3Continuously whisk while adding the rest of the milk until the mixture reaches a thick but pourable consistency.
- 4Warm a non-stick skillet or griddle over medium heat and lightly coat with oil or butter.
- 5Spoon batter onto the hot surface and flatten into a round shape using the back of the spoon.
- 6Fry for 2 to 3 minutes until bubbles appear across the top.
- 7Turn with a spatula and cook for 1 to 2 minutes until the underside browns.
- 8Transfer finished pancakes to a 200°F (100°C) oven to retain heat.
- 9Continue cooking the remaining batter, applying extra oil or butter to the pan whenever sticking occurs.
